Pico De Gallo & Guacamole

There are some staples that I simply can't live without; like a good pico de gallo and guacamole. These two side dishes are my all-time favourite! And I mean that with all my heart. They pack on all the flavour without all the salt, oil and sugar. You can use these toppings on almost everything. I put both the pico de gallo and guacamole on my tacos, burritos, salads, wraps, beans and rice dishes, with corn chips and on toast. These two recipes are great on their own or added together to the same meal. Serve them up at parties, watching the super bowl or movie night with the family and your bellies will be full of all the good things that these two staple side dishes bring. Loaded with naturally sourced vitamins and healthy fats there really is nothing to complain about when chomping these appetizers down.


Pico De Gallo


1 Tomato on the vine (finely diced)

1/2 Red Bell Pepper (finely diced)

2 tbsp cilantro/coriander (chopped)

1/2 Red onions

2 tbsp lime juice

Fresh Ground Pepper to taste


Guacamole


1 ripe avocado

1/4 red onion (chopped)

2 tbsp lime juice

1 tsp Stevia (or brown sugar)
