Chickpea Tuna Sandwich

This quick on the go meal can easily be pre-prepped the night before and quickly assembled in five minutes before you head out. Mix it up with any bread you have on hand, baguette, pita, ciabatta, whole grain, rye, ezekiel, etc. for a unique and exciting variation of this wholesome staple.

Serve it with a side salad or fruit for a complete meal.

What you will need

1 can chickpeas

1 cup mayo

1 celery stalk, chopped

1 tbsp lemon juice

salt & pepper to taste

1/4 salsa or pico de gallo

1/2 cup red cabbage

1/4 red bell pepper

1 cup romaine lettuce, chopped

Bread of your choice

In a small bowl combine mayo, lemon juice, salt & pepper and mix well.

Add in celery and combine.

Rinse canned chickpeas and place in a large bowl. Mash well with a fork.

Add mayo mixture to chickpea bowl and combine.

When ready to assemble, add all ingredients to your preferred bread. We like to enjoy it with a touch of bbq sauce but this is completely optional and could sound downright weird. We enjoy it though. Weird is our forte!
